At what temperature starts the destillation and how is it possible to soak the temperature to get all the alcohol?

The starting temperature depends on the alcohol content of your mash. As more alcohol in the mash as earlier starts the destillation. I.g. if you distill wine with app. 12%vol, the first drops comes app. at 81°C. During the destillation it is not possible to fix a temperatur, the temperature will rise the whole time. Otherwise it would not be possible to separate alchohol from water. From 81°C, the beginning of the destillation you collect the spirit until 91°C. Here you should stop.
