plum schnapps

I washed ca. 80 litre plums, removed the stones, smashed the fruits. I added 100 g yeast and 10 kg sugar, the fermentation started 5 hours later. After 4 days I added again 10 kg sugar, after 3 more days again 10 kg. At the end of fermentation - 3 weeks - I got a 23%vol mash, very flavoured!
I distilled it with a pot still, the result:
very great plum schnapps!!

Did you distill with the stones or without? Aren't there poisonous substances in the stones?

Hi John, I like the Recipe for the Schnapps, but
do You add any water at all??

Do not add water. Put all your sugar in at the begining, then stir on day 3. Adding suger again disrupts the fermantion. No more then 8kg of sugar for 180 liter barrel(putting 30kg of sugar in 80 liters of mash, will give you horrible sugar alcohol, and a sever headache). Save your money, yeast is not necessary, unless makeing sugar alcohol. If you use crushed whole fruits they will naturally ferment in 3 weeks.
