Give 30 l fresh elderflowers without thick stems in a vat together with 10 sliced lemons and 8 sliced oranges. Fill up with 70 l water.
Further add
- lactic acid to get a pH of 3,5.
- 6 ml pectinase
- 115 g turbo yeast
- 9 kg refined sugar
Stir and close the vat with a siphon.
After appr. one week add 9 kg sugar again, and stir the content.
After another week add the last portion of sugar (9 kg) and don't forget stirring.
The fermentation is after appr. 4 weeks ready (at 22°C) and the mash can be distilled.
The odor of the brandy is intense like elderflower, whereas the flavour is also refreshing because of the lemons and oranges.

Is it also possible to ferment without lemons and oranges to get only the elderflower taste?
